What makes the lava shine?

Lava leaves the tube at about 2,000F (1,150C). Because the air is relatively cold compared to this temperature, the outer surface of the flow cools very quickly and forms glass. The reflection of light off the glass is shiny. The refraction of light through the glass can cause the the appearance of different colors, much like light traveling through a prism.
